For the Puri:

  • 1 cup semolina (sooji)
  • 2 tbsp wheat flour
  • A pinch of salt
  • Water (for kneading)

Step-by-Step Instructions

1. Prepare the Puris

  • Mix semolina, wheat flour, and salt in a bowl. Add water gradually and knead into a firm dough.
  • Cover and rest for 20 minutes.
  • Roll the dough into small circles and fry in hot oil until they puff up and turn golden. Drain on a paper towel.

2. Make the Pani (Flavored Water)

  • Blend fresh coriander, mint leaves, and tamarind pulp with chilled water.
  • Add Wabhai Foods Ground Cumin, Black Salt, Red Chili Powder, sugar, and mix well. Adjust seasoning to taste and chill in the refrigerator.

3. Prepare the Filling

  • Combine mashed potatoes, boiled chickpeas, Wabhai Foods Chaat Masala, Red Chili Powder, and salt. Mix well.

4. Sweet Chutney

  • Heat tamarind pulp and jaggery in a small pan. Add Wabhai Foods Ground Cumin and simmer until thickened. Let it cool.

  • Gently crack the top of each puri. Fill with the potato-chickpea mixture.
  • Add a little sweet chutney and pour the chilled flavored water (pani) into the puri.
